I haven't lactofermented in a while, but the farm where I worked used to make ginger carrots, beet kvass, sauer kraut, and dill pickles. I loved the process and the way the food tastes. In my experience, I've found the recipes in Nourishing Traditions to use more salt than necessary and also some ingredients I don't typically use. I've found the book Wild Fermentation to be helpful.

I LOVE lacto-fermented foods. I haven't really made them yet though. I tried once, but it was incredibly salty, and I couldn't stomach it. I am hoping to try again this summer. I read somewhere that eating something lacto-fermented at every meal is important, and I definitely find that I feel better when I am doing that! I will have to look at Nourishing Traditions again, maybe buy it this time :-)
